When and where to plant: Select sunny location with loose, rich soil, and plant in early spring as soon as soil can be worked. Cultivate soil and enrich with organic matter. Make successive plantings at 3 week intervals. Firm soil over seed and keep moist.
Care: Keep soil moist, weed free, and apply vegetable food every 4-6 weeks.
Harvesting: Thin beets when less than 1 in. / 3 cm. in diameter and cook thinnings, top and all, "they're delicious." for tenderest beets, harvest when 1-4 in. / 3-10 cm. in diameter.
