Summary: Grown for its fine-textured, creamy white roots, salsify is noted for its rich oyster-like flavor. The tapered roots grow to 6 in to 8 in (15-20 cm) long and slightly more than 1 in (2.5 cm) across at the top. Fry, bake or cook like beets or carrots; use in soups and stews.
When and where to plant: Direct seed into deeply prepared soil in mid-spring. Sow again in late summer in mid winter areas. Keep seedbed moist. Sprouting is slow. Leaves are grass-like.
Care: Water regularly and fertilize when 6 in (15 cm ) tall. Keep weed free.
Harvesting: Pull or dig entire plant when root shoulder is 1 in (2.5 cm) across or slightly larger.
