Summary: Considered to be "The Vegetable of the Century". Winner of the All America Selections Committee's Gold Medal Award. Pick the delicious, tender and crisp pods when young and eat whole, pod and peas, raw, with a dip, stir fried, or cooked lightly as you would green beans.
When and where to plant: Select sunny location and plant after danger of frost and when the ground is warm. Cultivate soil and enrich with vegetable food. Continue planting at 2-3 week intervals until early summer. Firm soil over seed.
Care: Provide support as vines grow 4-5 feet tall. Water by soaking soil to reduce danger of disease.
Harvesting: Pick when shell is green and the seeds are developed, but not hard. For dried peas, allow to ripen fully on the vine.
