Quick and Easy Beef Vegetable Soup - Recipe


An easy vegetable soup that will taste like you've been cooking for hours.

Ingredients:

  • 1 pound lean ground beef
  • 1 quart reduced-salt beef broth
  • 1 quart water
  • 1 onion, chopped
  • 1 14-ounce can diced tomatoes, un-drained
  • 4 potatoes, peeled and cubed
  • 1 16-ounce package frozen mixed vegetables
  • ½ teaspoon ground black pepper
  • ½ cup grated Parmesan cheese

Directions: In a large Dutch oven over medium heat, cook ground beef until browned; drain. Add the beef broth, water, onion, tomatoes, potatoes, mixed vegetables, and pepper to the Dutch oven. Bring to a boil. Reduce heat and simmer about 30 minutes or until potatoes are cooked through. Pour into bowls and sprinkle with Parmesan cheese. Makes 4 servings.

EASY AND DELICIOUS This recipe fits the bill because it's so easy. I substitute pasta for the potatoes, which makes it even easier. My favorite kind of recipe, throw it together and forget it. Tastes great too.

EASY AND DELICIOUS
