Delicious Sweet Potatoes

The sweet potato is a delicious, sweet-tasting root vegetable rich in complex carbohydrates, fiber, beta carotene and vitamins C & B6. This versatile vegetable can be boiled, steamed, sautéed, baked or roasted. Whether thin and crunchy or chunky & meaty, doused with salt or cinnamon & sugar, waffle-cut or diced… there's always a perfectly suited style for the sweet potato to don at any meal. Here are a few of our favorite recipes for this sweet (or savory) treat.

Sweet Potato Fries
Cinnamon Sweet Potato Chips
Sweet Potato Biscuits
Sweet Potato Casserole


Sweet Potato Fries

Heat oven to 450 – cut in half lengthwise three peeled sweet potatoes, about 1 ½ pounds, then slice into ½ inch thick wedges. Toss with 1 tbsp. olive oil and season with ½ tsp. each salt and paprika. Place in a single layer on baking sheet. Bake 25 minutes, turning after 10 minutes until tender.


Cinnamon Sweet Potato Chips

  • 2 sweet potatoes, peeled and thinly sliced
  • 1 tablespoon melted butter
  • ½ teaspoon salt
  • 2 teaspoons brown sugar
  • ½ teaspoon ground cinnamon

Preheat oven to 400 degrees. Grease two baking sheets. Arrange sweet potato slices in a single layer onto baking sheets. Stir together butter, salt, brown sugar and cinnamon in a small bowl, brush onto sweet potato slices. Bake in preheated oven until edges curl upwards, about 20 to 25 minutes.


Sweet Potato Biscuits

  • 4 cups flour
  • 2/3 cup sugar
  • 2 tablespoons baking powder
  • 1 ½ teaspoons salt
  • 2 cups sweet potatoes, warm, cooked, and mashed
  • ½ cup oil or shortening
  • ¼ cup milk

In large bowl, mix all ingredients together. Separate dough into pieces and roll into average size biscuits. Bake on greased baking sheet at 475 degrees for 15 minutes.


Sweet Potato Casserole

  • 4 1/2 cups cooked and mashed sweet potatoes
  • 1/2 cup butter, melted
  • 1/3 cup milk
  • 1 cup white sugar
  • 1/2 teaspoon vanilla extract
  • 2 eggs, beaten
  • 1 cup light brown sugar
  • 1/2 cup all-purpose flour
  • 1/3 cup butter
  • 1 cup chopped pecans

Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish. In a large bowl, mix together mashed sweet potatoes, 1/2 cup butter, milk, sugar, vanilla extract, and eggs. Spread sweet potato mixture into the prepared baking dish. In a small bowl, mix together brown sugar and flour. Cut in 1/3 cup butter until mixture is crumbly, then stir in pecans. Sprinkle pecan mixture over the sweet potatoes. Bake for 25 minutes in the preheated oven, or until golden brown.
