How To Churn Butter at Home


June is National Dairy Month. What better way to celebrate than by making your own butter at home! With a few supplies and fresh farm milk, anyone can make butter. The dairy experts at Southern States have all the information you need for churning butter in your farmhouse kitchen.

The act of churning butter is quite simple. The agitation of cream with a churn, or other device, transforms cream into butter. Making butter from home does not require fancy or expensive supplies. Your recipe will require fresh cow's milk, but you should have the basic equipment you need at home. Here is a list of supplies you will need:

  • Fresh cow's milk
  • Sea salt (optional)
  • Cold water
  • Churning device or a glass jar with water-tight lid

There are four basic steps to making homemade butter. While the steps for making fresh butter are simple enough, several different methods can be used. Butter can be made in a churn, a blender and even in a jar. The steps below will demonstrate how to make butter in a jar. Step One: Skimming Milk

For best results, use fresh cow's milk. Place the milk in the refrigerator overnight to allow the cream to rise to the top. Skim the cream from the top of the milk and add it to your glass jar.

Step Two: Churning Butter

Fill your jar 1/3 full with cream. Set aside on the counter and let the cream come to room temperature. This is recommended for two reasons: it will allow the cream a chance to slightly sour which will give the butter a sweeter flavor and the churning process will take less time. The optimal cream temperature for churning is 55-65ºF. Depending on the temperature, churning can take as little as 15 minutes, or up to 30 minutes, to make homemade butter.

Shake the jar vigorously. As you continue to do this, the churning process will go through several stages. First, the cream gets frothy and then it transforms into a heavy, thick pudding-like consistency. Keep shaking the jar and globules of butter will start to separate from the liquid. Lastly, the small, solid pieces join together creating a mass of fresh butter and leaving a watery liquid in the jar.  This water is known as buttermilk.

Step Three: Kneading and Washing

Pour off the buttermilk and press the butter into a mound. Moving to the sink, knead the butter under cold, running water for a few minutes until the water runs off clear. This gets out all of the remaining buttermilk which will prevent the butter from spoiling quickly. If you prefer, you can add salt at this time; just a little bit to taste is all you need.

Step Four: Storing Your Fresh Butter

Once your butter is finished, refrigerate or freeze it immediately to prevent spoiling.

It is important to note that not all butter is yellow. Since the cow’s butterfat determines the color of the butter, it may be more white than yellow. If this happens, there is no need to worry.
